It's back to school today & I have to say, I'm ready. I don't want you to think we didn't enjoy ourselves because -OMG - we did. We slept in, hibernated, snuggled, and savored every minute. But, 16 days is a long time to be off and we're creatures of habit during the school year. So Ella was more than ready to get to Miss Jennie's & I actually enjoyed lesson planning over the weekend. 

If I had to pick a word to describe my break, I'd have to go with accomplished. I got so. much. done. I'm not talking about just the normal day to day tasks that I typically struggle to get through, I mean I got some serious shit accomplished. And since I feel like tooting my own horn, I thought I'd share a few things that I checked off my to-do list. 

  • I cooked real meals. Once we returned from Christmas on Saturday that 27th, we only ate out three times. Now, I know this is totally normal for a lot of families, but when we're in season, I rarely cook this often. Our three meals out were on New Year's Day with my sister & her husband, then lunch at Moe's while out running errands, and another lunch with one of my friends that was planned ages ago. Other than that, we ate an unprecedented 19 meals at home in a matter of 7 1/2 days. I tried out some new recipes like these baked tacos, this baked potato soup, and this crockpot alfredo. All were delicious! I even have soup made ahead for lunches this week - who am I? 
  • I cleaned house. Not in the sense that I simply ran the vacuum & dusted. I mean I truly cleaned the house. I tore apart dressers, sorted clothing, moved bins to the basement, and hauled three bags of clutter to the curb. I still have a ton more to go - Ella's playroom is seriously out of control - but I made a serious dent. 
  • I scored some deals. You all know how much I love a bargain, so I was pumped to find some great after Christmas sales. My most impressive finds though were from Target! Yesterday morning, I got to the store around 9 am & it was QUIET. We took the time to browse the dollar aisle & I found everything I could possibly need for Valentine's Day! I'll be sharing how I'm putting it all together for Ella's BFF's soon - it's going to be adorable! Oh, and I found this awesome heart garland for my house too, it wasn't in the dollar section, but at $5.99 it was definitely a steal! 
  • I stayed within my calories every. single. day. All that eating at home made my calorie counting really easy. I was able to control everything that went into my mouth & I feel so refreshed  heading back to school. It really is true what they say, once you start eating healthy, you're body craves healthy. 
  • I slept. I know what you're thinking. Why is sleep an accomplishment? Trust me, it is. I have a toddler & work long days. I felt like I'd been perma-tired since September & I am finally caught up on my sleep & feeling amazing. So right now, yes, sleep is an accomplishment. 
Here's hoping I leave school feeling accomplished today too! Let's get back to it...
